"The dining environment at Aurum - glittery gold walls, operating room equipment and those much talked about wheelchairs - is clinically cool (or cold) and there is very much a showroom element to the place. Executive chef Edward Voon and his team of culinary technicians 'perform' well in a crisp professional environment but he is still a molecular gastronomist-in-training and the Aurum experience is essentially a triumph of style over substance - and even the style is questionable to those who fail to see the fun in hospital equipment. While diners were invited to watch how the lychee and gold 'caviar' was created (using large syringes and a solution that turned drops of liquid into individual globules)..."

"The buzz around Aurum, instead, is that it is Singapore's first molecular gastronomy restaurant. If you are not familiar with molecular gastronomy, it was something invented in a restaurant called El Bulli near Barcelona, Spain, in the late 1990s. It basically challenges normal cooking conventions with dishes that seem to have come out of a mad scientist's lab. A dish that looks ordinary may burst with unusual flavours on the palate. Or you may get, for example, an ice cream that surprises you by tasting of roast beef. So, yes, I was expecting to be wowed at Aurum..."
