The menu is classical Italian cuisine with a focus on seafood and fresh home-made pasta. The chef de maison, Paolo Scarpa, was trained in Venice and London – where he honed his craft at the famous Harry’s Bar and Cecconi’s – before he moved to Singapore in the 80s. With Da Paolo e Judie, Chef Paolo returns to his Venetian roots to produce a charmingly diverse menu of crustaceans and assorted marine-fare. Each dish is carefully and imaginatively crafted so that the flavours of the sea remain intact.
