Our food is very much produce-driven, and quality produce, which Chef Oh personally sources from purveyors, are highly regarded and essential in our kitchen. We use an abundance of ingredients such as herbs and infused oils, which add depth to signature specialities such as B.B.Q Kangaroo loin with white truffle infused apple-soya glaze, sauteed sugar peas, mushrooms and wasabi-potato mash. Over 90 percent of the ingredients we purchase are imported from Australia.
Through the seasons, the food we serve are ever-changing as well, depending on the produce we have at hand. There is always something different, even on our cheese boards!
