Will believes in basic, fuss-free cooking – letting the fresh ingredients speak for themselves - “I believe there is a time and place for food with a recipe that reads like a novel complete with fancy sauces - but you can’t eat that on a daily basis. What I love to eat all the time is simple good food with the best ingredients possible. For example, fish – the less you do to a fish the better it tastes - It doesn’t take much to sear some fresh dory fillet in spluttering butter with a sprinkle of parsley, a crack of black pepper and a squeeze of lemon; but it is one of the best things to eat.”
